Chicken meatballs with mashed potatoes

I put together this delicious, but simple meal after craving some meatballs. I also learned to make mashed potatoes while making this dish, and it's now one of my favorite side dish.

Ingredients

Chicken meatballs

  • 400 g chicken filet
  • 1 egg
  • 20 g lactose free milk - 0,5 % fat (you can use normal milk if you want to)
  • 1 tbs salt
  • 1 tbs chili powder (make sure it's not mixed with garlic)
  • 1 tbs paprika spice
  • 1 tbs cumin
  • 1 tbs oregano

Mashed potatoes

  • 600 g potatoes
  • 90 g lactose free milk (you can use normal milk if you want to)
  • 20 g margarin (I used the norwegian brand "Brelett")
  • 20g chives
  • Some salt
  • Some black pepper

Method

Chicken meatballs

  1. Pre-heat the oven to about 175° C.
  2. Grind the chicken in a food processor.
  3. Mix the egg, milk and spices inn with the chicken.
  4. Put the mix into a plastic bag and cut a hole in one of the ends, so that some of the meat mix gets through.
  5. Squeeze some meat out on a baking paper till the meatballs have proper size (however big you want them to be).
  6. Put the meatballs in the oven for about 20 - 25 minutes (preferable while you cook the potatoes for the mashed potatoes recipe).

Mashed potatoes

  1. Boil water in a pot that is big enough to room the potatoes.
  2. Peel the potatoes and put them in the boiling water. Put a lid on. NB: Cut the potatoes in half if they are big.
  3. Boil them on medium heat for 20 - 25 minutes. Use a knifte to see if they are ready (should be soft-ish all the way through).
  4. Mash the potatoes in a bowl and add milk, butter, chives, salt and pepper.

Extra garnish

This is not included in the macros, but I enjoy some lingonberry-jam as extra garnish to this dish. I think it makes the meal extra fresh, and gives it an extra good flavor. But you can use whatever you please.
